Wind Waker had by far the most personality and identity of any of the Zelda games because of its distinct and charming stylistic choices, Link was much more expressive as a protagonist and not just a conduit for player agency so he felt a lot more like an actual character (the segments of his grandmother and sister along with his relationship with Tetra and her crew sort of strengthen this too). Wind Waker is immersive because as a piece of art it doesn't have to be bound on formal logic that exists in our world, it works on emotional logic and succeeds there in spades, articulating the classic heroic adventure story framed in a Waterworld-esque fantasy future incredibly well.
