Sometimes I have to trim off some excess fat though. Anyway I can not actually see any remainders of the cardio-vascular system, I am pretty sure the bulk if not all of them are removed when you filet the fish using the spine as guide right through the middle. Then again I could be wrong

@shadoweclipse Because I do not 100% know how they work. And I work in a professional kitchen, but I never actually prepared fish from the ground up, and I was wondering how. Turns out it is easy game, Still I was wondering about the inner workings of the fish.

@shadoweclipse I am not a chef, I am more like, "that guy who is a great chef's assistant", and it is charity-work for me right now... Long story short. There is an appartment building for veterans who need some form of help to get through the day. One day I asked whether I could have a roof over my head in exchange for doing a lot of ground-work. And now I am in the kitchen almost every day preparing meals in the building's professional kitchen alongside the guy who actually gets paid for that. Preparing meals for the veterans.
