@atticus personally I'm better versed in trackers, e.g. Renoise, OpenMPT, Schism Tracker, Milky Tracker, etc. (roughly in descending order of functionality) They're surprisingly versatile, once you get over the rather steep learning curve of entering everything one note at a time, and in hexadecimal :D

@atticus If you're looking to go the free route, MuseScore is an open source scoring program, but I've had much better luck with Sibelius.

@atticus A notes-on-staff or piano-roll sort of program would probably suit you better, then. Maybe have a look at Cubase, Reason, and maybe Fruity Loops Studio. (Disclaimer: I've never actually used any of those.) You might also want to have a look at Ableton Live.
