@takemangoakenji I wouldn't count what I did in the service as hiking but it certainly toned me for it nowadays. Before finishing the Le Tour it's what I've been training to do, days/weeks at a time. I might have even goaded someone in to doing it with me.

I have a road bike designed for 26" tires that can handle 2.2" knobby tires with fenders (larger without), but I haven't taken it out into conditions like that yet. The bike pictured there is a mountain bike with drop bars, but I didn't have any knobby tires at that point.-
@awl There's a group of riders out here who regularly goes on fire and logging roads with 42-60mm smooth tires, but I've found that only works well when the roads aren't really steep or covered in snow. I do get wheelslip on steep grades on saturated hardpack with smooth tires, but I've learned to just keep pedaling to continue up.

@takekiwiakenji with the winters here I'm thinking of an mtb even without mountains to ride towards. Namely as I'd like to ride more, drive less excepting >50mi destinations.

@awl You might consider a "plus" bike, which are between classic mountain bikes and fatbikes. 2" wide tires still dig into snow, but 3" wide tires don't as much. Fatbikes with their 4-5" wide tires are used in places that get lots of snow, as well as sandy areas.

@takemangoakenji I briefly considered a fat bike but considered that overkill at least in the cities. My biggest concern is ice as even treated the roads here get goofy.

@awl I also got 2" wide studded tires after I went down on black ice and tore some cartilage in my rib cage. Haven't used them beyond bedding in the studs.
