@starlightbolt i've done a couple OC ponies by request. I use templates and GIMP, and save everything pertaining to each pony in a separate folder. I had announced that I was taking requests on 4chan, and had the person email me so i could give it directly to them, as well as ask them questions, get descriptions, etc.
