  1. Has anyone here cooked with lamb and if so what spices did you use, and how did it turn out? I tried ground lamb with onion powder, oregano and basilica but it didn't work out so well, didn't seem to even take in the spice.

    1. @awlditzy I haven't cooked with lamb before, but I have a friend who has and he usually likes to use a rub made with garlic, lemon, and chilis.

      1. @northernnarwhal Hmm. Lemon probably would have helped even if it was ground. I used to brine mutton with onions and basilica and it turned out fine but it didn't this time round.

        1. @awlditzy Yeah, onions and basil are both really sharp flavours so they conflict too much with lamb's heavy taste.

          1. @northernnarwhal See now that's what I was told about mutton but it came so well together. I'll have to think of more neutral flavours for lamb it seems.

            1. @awlditzy Sour flavours like lemon and sumac can do you really well if you're going for a more Indian dry rub kind of flavour.

              1. @northernnarwhal To be honest it was just put into a stew with rice, celery and potatoes and I wanted something other than ground beef.

                1. @awlditzy I've also heard cumin goes really well with lamb, though I haven't tried it myself. Rosemary too.

                      1. @northernnarwhal Let's call you the winner in this one. I've spent too much time thinking in Russian lately to pun well.

    2. @awlditzy Try marinating it like that for a day or two to see if it takes it better.

Friday, 29-May-15 02:53:16 UTC from web
      1. @nerthos I thought with it ground instead of just a cut, marinating wouldn't make much a difference, also I was not so sure of how dense it was. The problem likely, was using dry onion powder and grinding it in. Sauteeing it with onion, maybe, would have been better an effect.

Friday, 29-May-15 02:55:08 UTC from web
        1. @awlditzy Oh, yeah, dry onion isn't too good for that... should use freshly cut instead. Dry onion is better for sauces or the like where it has more than enough water to absorb.

          1. @nerthos This is what one gets for picking up groceries in a hurry.

            1. @awlditzy I often just go to the... not sure there's a word for it in english. The "verdulería" down the block for any vegetables/fruits

Friday, 29-May-15 03:16:58 UTC from web
              1. @nerthos I bought into the whole American thing of groceries every week because it's simpler than every couple days, at least over here it is.

Friday, 29-May-15 03:19:29 UTC from web
                1. @awlditzy Over here the custom was to make a monthly big grocery shopping, but still when it comes to stuff like vegetables it's more of a "buy when needed" thing, to ensure ingredients are fresh. Also walking some... 200m twice a week isn't bad

                  1. @nerthos Here it would be a kilometre one way to the closest mart from home, but is nothing when one drives.
